I hate being sick and it's even worse when it's gorgeous outside and all I want to do is swim! I haven't been motivated to do anything for the past couple of days but I'm praying that tomorrow is better!
Even though I'm sick I'm also a mom so I still have to feed the child! Here is a super simple one pan dish which means less cleanup, perfect for the way I feel right now.
Preheat oven to 350
Grease pan with coconut oil
In 6 of the holes lay bacon around it
Pop in the oven for 7-8 minutes
While its in the oven dice up your Brussels sprouts and toss lightly with olive oil
Pull bacon out of the oven, crack an egg in each of the bacon cups, sprinkle Brussels sprouts on top
Fill all the other holes with Brussels sprouts, sprinkle with sea salt if you want
Bake in oven for about 20min or until eggs are cooked to your liking
My toddler gobbled it up!

Easy paleo egg cups for toddlers only 3 ingredients
this is a simple recipe that you can make with your kids dairy-free, gluten-free, legume-free
4 eggs
2 bananas
Handful of raspberries
Preheat oven to 350
Chop and smash bananas (I let my toddler use a butter knife and fork to do this)
Smush all of the raspberries
Break eggs into the bowl
Mix everything together in large bowl
Grease muffin tin (I use coconut oil)
Fill muffins a little over halfway
Pop in the oven for 12-15 minutes
